I think the issue is not so much about self organization, but about letting people decide how to do their work. They can still greatly benefit from having an "organizer" in their midst - but virtually.
Over the past year, I launched a global movement called "Agile 2". Agile 2 was created by a virtual team. I was the organizer. It was all done remotely. But without an organizer, it would have taken years. Instead, we did it in months.
But no one was micromanaged in terms of how they did their part. That is the key. That is what remote work has given us.
